Sneak (hold shift) and right-click on any block or surface you want to sit on. Your player will enter a sitting pose on that block.

Yes, you can sit on almost any block in the game, including solid blocks, stairs, slabs, carpets, and even decorative blocks. Some transparent or very small blocks may not work as well.
