How do I stop a crop from growing?
Place an ice block directly underneath the farmland the crop is planted on. As long as that ice stays there, the crop won't advance to its next growth stage.
Does the ice go under the farmland or replace the farmland?
The ice goes underneath the farmland block, not in place of it. The crop still needs its farmland to stay planted; the ice just sits below as the growth-blocking layer.
Can I still use bone meal on a frozen crop?
Yes. Ice only stops natural growth, so bone meal still advances the crop manually. That's how you pick the exact stage you want before locking it in place.
How do I freeze a crop at a specific growth stage?
Let the crop grow (or bone meal it) until it reaches the stage you want, then place ice under the farmland. Once the ice is there, it stays at that stage permanently.
Does this work on modded crops too?
Yes, the mod is built to affect both vanilla and modded crops. Any crop that uses the normal growth system should be frozen by ice underneath it.
My crops keep growing even with ice underneath. What's wrong?

Does freezing crops with ice hurt performance or cause lag?
