Copper Horn work in Horseman?

You bind a horse to your instrument with Sneak+Use, then call it by tooting the horn. The horse remembers its owner, so you can't bind a horse already bound to another player.

Can horses swim in the Horseman Mod?

Yes, ridden horses can swim by pressing jump (spacebar) when in water. Camels, Skeleton horses, and Zombie horses are exceptions by default, configurable with the '#horseman:cannot_swim' entity tag.
