How do I get started with sailing ships?

How do I trim my sails for better control?
Right-click on rigged sail cloth to reef (roll up) the sail when not in use, and use ropes for continuous sail trimming to adjust how much sail area catches the wind. This lets you fine-tune your ship's speed and handling.
