Not Enough Animations Mod fixes some movement animation bugs and also adds eating animations visible in third-person mode. When rowing a boat, the player’s hands will move, and when aiming with a bow, the player will no longer poke their face with an item in the off-hand. Aww-Yeah!

How do I turn on the eating and drinking animations?
They are enabled by default once the mod is installed, so no toggle is needed. Just eat or drink while in third-person view to see the up-and-down motion.
Why can't I see my own animations in third person?
