These packs change what a mob is shaped like, which goes further than any resource pack can. Hostile mobs get new silhouettes and proportions, passive animals are rebuilt with legs and heads that read as the species they represent, and ambient entities gain detail vanilla never gave them. The effect is strongest on mobs you see constantly, where a reshape changes the feel of the whole world.
