How to Make Tobiko and Tobiko California Rolls
Getting Tobiko
Tobiko is the roe topping used in the Tobiko roll family. It is a distinct ingredient from the base fish and crab items, so you need it on hand before you attempt any Tobiko recipe. Treat Tobiko as a finishing component that sits on top of an otherwise complete roll.
The Tobiko Roll Family
Once you have Tobiko, you can make the full Tobiko line. The Tobiko California rolls come in three proteins and three styles each:
- Tobiko Salmon California, Tobiko Salmon Cheese California, Tobiko Salmon Cucumber California
- Tobiko Tuna California, Tobiko Tuna Cheese California, Tobiko Tuna Cucumber California
- Tobiko Crab California, Tobiko Crab Cheese California, Tobiko Crab Cucumber California
Each of these builds on its non-Tobiko counterpart — Salmon California, Tuna California, Crab California, and their Cheese and Cucumber versions — with Tobiko added as the topping.
Order of Operations
Make the base California roll first using Cooked Rice, Nori Sheets, and the named protein, adding Cheese or Cucumber where the variant calls for it. Then apply Tobiko to reach the Tobiko version. Because Cheese and Cucumber are separate ingredients, decide which variant you want before you start so you do not waste a base roll on the wrong topping.
